The Alaska Culinary Academy, a part of the Alaska Institute of Technology, is a culinary school located in Seward, Alaska. It offers an Associate of Applied Science degree in Culinary Arts and a certificate in Baking and Pastry Arts.
The Culinary Arts program is designed to provide students with the skills, knowledge, and experience necessary to become successful chefs and culinary professionals. The curriculum includes a combination of classroom instruction and hands-on training in a commercial kitchen setting. Students will learn about food preparation, kitchen management, and food safety, as well as gain experience working with local, seasonal ingredients.
The Baking and Pastry Arts certificate program is designed to provide students with the skills and knowledge to become successful bakers and pastry chefs. The curriculum includes instruction in baking techniques, pastry arts, and confectionery. Students will gain hands-on experience in a commercial kitchen setting, learning how to prepare a wide variety of baked goods and pastries, as well as gain an understanding of food science and nutrition.
The academy also offers a unique opportunity for students to learn about Alaskan seafood, since Alaska is known for its seafood industry. Students are provided with the opportunity to learn about the harvesting and processing of seafood, as well as how to prepare and cook it in a variety of ways.
The school is accredited by the American Culinary Federation Education Foundation Accrediting Commission (ACFEFAC), the accrediting body for post-secondary culinary education in North America. Graduates of the program are eligible to take the ACF certification exam and become certified as a Culinarian.
